The oil to use on a butcher block countertop is the same oil you should use to maintain a wood cutting board.
If you have any stains, you might need to sand more heavily. For thicker cutting boards or butcher blocks, repeat this process on underside of board. But we learned along the way that just the oil that penetrates the wood won't make it for us.
